When last in Melbourne, I happened upon the SENSORY LAB.
The geek quota was at an all-time high as I ordered my macchiato – syphon AND stirred.
The coffee, I let steep in front of me. The concept of syphon coffee is akin to tea making – and in the Japanese tradition – where the water is not allowed to reach boiling point. Coffee, I later discovered, turns bitter at boiling point.
24 hours in Perth. Well… not consecutive hours. The city has so much to offer and I hope to spend more time there in the future.
