			<content:encoded><![CDATA[<p>When last in Melbourne, I happened upon the <a title="Google Map" href="http://www.google.com.au/maps/place?cid=16270271197103431943&amp;q=sensory+lab&amp;fb=1&amp;gl=au&amp;hq=sensory+lab" target="_blank">SENSORY LAB</a>.</p>
<p>The geek quota was at an all-time high as I ordered my macchiato &#8211; syphon AND stirred.</p>
<p>The coffee, I let steep in front of me. The concept of syphon coffee  is akin to tea making &#8211; and in the Japanese tradition &#8211; where the water  is not allowed to reach boiling point. Coffee, I later discovered, turns  bitter at boiling point.</p>
